Milk cake (Kalakand) recipe

Milk cake is basically the most famous sweet of Rajasthan, as it is originated from Alwar city of the Marwar Region.
Recipe for the milk cake is as follows:
Ingredients:
3 liter milk, full cream milk
1 cup sugar
2 tbsp water
2 tsp lemon juice
¼ tsp elachi powder
2 tsp pistachios, chopped
Method:
In the start take a large, thick bottomed pan pour the milk in it and put it on flame.
Let the milk get heat the milk on medium flame and keep stirring the milk occasionally.
Keep boiling the milk until its quantity reduces to half, and keep checking its consistency.
Now, in a cup take 2 tbsp of water and 2 tsp of lemon juice, give it a mix.
Pour this diluted lemon water onto the milk keeping on low flame.
Now, simmer it for 2 minutes without stirring.
Stir the milk and allow the milk to curdle.
After it settles down, add 1 cup of sugar.
Stir continuously until the sugar dissolves completely.
Keeping the flame on low as the milk splutters, you will see the milk thickens and turns slightly golden brown.when you see the milk mixture starts to separate from pan, add elachi powder and mix well.
Transfer the entire milk mixture into a greased steel vessel.
Then allow the mixture to cool in 12 hours or till they cool completely.
Once it is cooled completely, separate the sides with the knife.
Finally, cut the milk cake (kalakand) into pieces and garnish with chopped pistachios.
